Ingredients

  • 1 cup yellow cornmeal
  • 0.5 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup finely chopped onion
  • 1 egg, beaten
  • 0.75 cup milk
  • Oil for frying (vegetable or canola)

Steps

  1. Heat oil in a deep skillet or pot to 350°F (175°C).
  2. In a bowl, whisk together cornmeal, flour, sugar, baking powder, salt, and pepper.
  3. Stir in chopped onion.
  4. Mix in egg and milk until just combined (batter will be thick).
  5. Drop spoonfuls of batter into the hot oil, being careful not to overcrowd.
  6. Fry 2–3 minutes, turning occasionally, until golden and cooked through.
  7. Remove hushpuppies with a slotted spoon and drain on paper towels.
  8. Serve warm with your favorite dipping sauce.
