
Southern Baked Cornbread
Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 0.25 cup sugar (optional for slight sweetness)
- 1 tbsp baking powder
- 0.5 tsp salt
- 1 cup buttermilk (or milk with 1 tbsp lemon juice)
- 2 large eggs
- 0.25 cup bacon grease, melted butter or oil
Steps
- Preheat oven to 425°F (220°C).
- Grease a 9-inch cast iron skillet or baking pan.
- In a bowl, whisk together cornmeal, flour, sugar (if using), baking powder, and salt.
- In another bowl, whisk buttermilk, eggs, and melted butter.
- Pour wet ingredients into dry and stir until just combined — don't overmix.
- Pour batter into the prepared pan and smooth the top.
- Bake 20–25 minutes until golden and a toothpick inserted in the center comes out clean.
- Let cool slightly, then slice and serve.
