
Tortilla de Patatas (Spanish Potato Omelette)
Ingredients
- 3 medium potatoes, peeled and thinly sliced
- 1 small onion, thinly sliced
- 4 large eggs
- 0.25 cup olive oil
- 1 tsp salt
- 0.25 tsp black pepper
Steps
- Heat olive oil in a large nonstick skillet over medium heat.
- Add potatoes and onions; cook gently 10–12 minutes until soft but not browned.
- In a bowl, whisk eggs with salt and pepper.
- Drain excess oil from the pan, leaving a thin coating.
- Pour eggs over the potatoes and onions in the pan.
- Cook on medium-low 5–7 minutes until edges start to set.
- Use a plate to flip the tortilla and slide it back into the pan.
- Cook 3–4 more minutes until fully set.
- Slide onto a plate, let rest a few minutes, and serve warm or at room temperature.
