Ingredients

  • 3 medium potatoes, peeled and thinly sliced
  • 1 small onion, thinly sliced
  • 4 large eggs
  • 0.25 cup olive oil
  • 1 tsp salt
  • 0.25 tsp black pepper

Steps

  1. Heat olive oil in a large nonstick skillet over medium heat.
  2. Add potatoes and onions; cook gently 10–12 minutes until soft but not browned.
  3. In a bowl, whisk eggs with salt and pepper.
  4. Drain excess oil from the pan, leaving a thin coating.
  5. Pour eggs over the potatoes and onions in the pan.
  6. Cook on medium-low 5–7 minutes until edges start to set.
  7. Use a plate to flip the tortilla and slide it back into the pan.
  8. Cook 3–4 more minutes until fully set.
  9. Slide onto a plate, let rest a few minutes, and serve warm or at room temperature.
