Ingredients

  • 4 large eggs
  • 2 english muffins or slices of bread, toasted
  • 1 can artichoke hearts, drained and halved
  • 4 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp lemon juice
  • 1 tbsp chopped parsley (optional)

Steps

  1. Bring a pot of water to a gentle simmer and poach eggs about 3–4 minutes until the whites are set but yolks are still soft.
  2. Meanwhile, melt 2 tbsp butter in a small saucepan over medium heat. Stir in flour and cook 1 minute.
  3. Gradually whisk in milk until smooth and thickened, about 3–4 minutes.
  4. Season the sauce with salt, pepper, and lemon juice; remove from heat.
  5. Arrange toasted English muffins or bread on plates and top each with artichoke halves.
  6. Place two poached eggs on each toast and spoon the creamy sauce over the top.
  7. Sprinkle parsley if desired and serve immediately.
