Ingredients

  • 4 small flour or corn tortillas
  • 3 large eggs
  • 1 tbsp milk or water
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup shredded cheese (cheddar or Mexican blend)
  • 1 tbsp butter or oil
  • 0.5 cup cooked breakfast sausage, crumbled (optional)
  • Optional add-ins: cooked bacon bits, diced tomatoes, sliced avocado, salsa

Steps

  1. If using sausage, cook it in a skillet over medium heat until browned and fully cooked. Set aside.
  2. In a bowl, whisk eggs with milk, salt, and pepper.
  3. Heat butter or oil in the skillet over medium heat.
  4. Pour in egg mixture and scramble until just set.
  5. Warm tortillas in the microwave or skillet for 15–20 seconds.
  6. Divide scrambled eggs among the tortillas.
  7. Add cooked sausage if using, then sprinkle with cheese and any other toppings.
  8. Fold and serve immediately.
