Ingredients

  • 2 cup fresh or frozen corn kernels
  • 1.5 cup lima beans (fresh or frozen)
  • 2 celery stalks, sliced
  • 1 small onion, diced
  • 2 tbsp butter or olive oil
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp fresh parsley, chopped (optional)

Steps

  1. Heat butter or olive oil in a large skillet over medium heat.
  2. Add onion and celery; cook 3–4 minutes until softened.
  3. Stir in corn and lima beans; cook 5–7 minutes until veggies are tender and heated through.
  4. Season with salt and pepper.
  5. Remove from heat and sprinkle with parsley if using.
  6. Serve warm as a side dish.
