American Chop Suey

Classic New England comfort bowl — hearty pasta with ground beef and tomato sauce. Not exotic, just satisfying.

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 green bell pepper, diced
  • 1 can (28 oz) crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and black pepper to taste
  • 12 oz elbow macaroni or other short pasta
  • Grated Parmesan for serving (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook pasta until al dente; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add onion and bell pepper and cook 4–5 minutes until softened.
  3. Add garlic and cook 30 seconds.
  4. Add ground beef and cook until browned, breaking it up with a spoon.
  5. Stir in crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer 10–12 minutes until sauce thickens.
  6. Stir in cooked pasta, mixing well so everything is coated.
  7. Serve hot with grated Parmesan if desired.
