
Chicken Parmesan
Ingredients
- 2 large chicken breasts, pounded to even thickness
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1.5 cup Italian-style breadcrumbs
- 0.5 cup grated Parmesan
- 1 tsp garlic powder
- Salt and black pepper to taste
- 0.25 cup olive oil (for frying)
- 1.5 cup marinara sauce
- 1.5 cup shredded mozzarella
- Chopped fresh parsley (optional, for garnish)
Steps
- Preheat oven to 400°F (200°C).
- Season chicken with salt and pepper.
- Set up three shallow dishes: flour in one, beaten eggs in one, and breadcrumbs mixed with Parmesan and garlic powder in the last.
- Dredge each chicken piece in flour, then egg, then the breadcrumb mixture, pressing gently to adhere.
- Heat olive oil in a large skillet over medium-high heat and cook chicken 3–4 minutes per side until golden and crisp.
- Transfer chicken to a baking dish. Spoon marinara sauce over each piece and top with shredded mozzarella.
- Bake 10–12 minutes until cheese is melted and bubbling.
- Garnish with parsley if desired and serve hot.
