Ingredients

  • 2 large chicken breasts, pounded to even thickness
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1.5 cup Italian-style breadcrumbs
  • 0.5 cup grated Parmesan
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • 0.25 cup olive oil (for frying)
  • 1.5 cup marinara sauce
  • 1.5 cup shredded mozzarella
  • Chopped fresh parsley (optional, for garnish)

Steps

  1. Preheat oven to 400°F (200°C).
  2. Season chicken with salt and pepper.
  3. Set up three shallow dishes: flour in one, beaten eggs in one, and breadcrumbs mixed with Parmesan and garlic powder in the last.
  4. Dredge each chicken piece in flour, then egg, then the breadcrumb mixture, pressing gently to adhere.
  5. Heat olive oil in a large skillet over medium-high heat and cook chicken 3–4 minutes per side until golden and crisp.
  6. Transfer chicken to a baking dish. Spoon marinara sauce over each piece and top with shredded mozzarella.
  7. Bake 10–12 minutes until cheese is melted and bubbling.
  8. Garnish with parsley if desired and serve hot.
