
Country Captain Chicken
Ingredients
- 1.5 lb (680 g) boneless chicken thighs or breasts, cut into chunks
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 tbsp curry powder
- 1 tsp ground turmeric
- 0.5 tsp paprika
- 0.25 tsp cayenne (optional)
- 1 can (14 oz) diced tomatoes
- 0.5 cup chicken broth
- 0.25 cup golden raisins (optional)
- 0.25 cup slivered almonds (optional)
- Salt and black pepper to taste
- 2 cup cooked white rice
- Chopped parsley or cilantro for garnish (optional)
Steps
- Heat oil in a large skillet or Dutch oven over medium heat.
- Add chicken and cook 5–7 minutes until browned on all sides; remove and set aside.
- Add onion to the same pan and cook 4–5 minutes until softened.
- Stir in garlic, curry powder, turmeric, paprika, and cayenne (if using); cook 1 minute until fragrant.
- Add diced tomatoes, chicken broth, raisins, and almonds if using.
- Return chicken to the pan; bring to a simmer, then reduce heat and cook 15–20 minutes until sauce thickens and chicken is cooked through.
- Season with salt and pepper.
- Serve hot spooned over cooked rice and garnish with parsley or cilantro if desired.
