
Chili Mac
Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 green bell pepper, diced (optional)
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 2 tsp chili powder
- 1 tsp ground cumin
- 0.5 tsp paprika
- Salt and black pepper to taste
- 12 oz elbow macaroni or other short pasta
- 1.5 cup shredded cheddar cheese
Steps
- Bring a large pot of salted water to a boil and cook pasta until al dente; drain and set aside.
- Heat olive oil in the same pot over medium heat. Add onion and bell pepper and cook 4–5 minutes until softened.
- Add garlic and cook 30 seconds.
- Add ground beef and cook until browned, breaking it up with a spoon.
- Stir in diced tomatoes, tomato sauce, kidney beans, chili powder, cumin, paprika, salt, and pepper. Simmer 10 minutes.
- Stir in cooked pasta until fully coated.
- Remove from heat and sprinkle shredded cheddar on top; let melt before serving.
- Serve hot.
