Ingredients

  • 1 lb ground beef
  • 1 tbsp oil
  • 1 small onion, diced
  • 4 eggs
  • 4 cup frozen hash browns
  • Salt and pepper to taste
  • 1 cup shredded cheddar
  • 1 can (10-12 oz) canned gravy or sausage gravy
  • Optional: hot sauce

Steps

  1. Heat oil in a large skillet over medium heat. Add ground beef and onion; cook until browned and cooked through. Season with salt and pepper.
  2. While beef cooks, heat hash browns in another skillet according to package directions until crispy.
  3. Warm the gravy in a small saucepan or microwave.
  4. Cook eggs however you like (fried or scrambled).
  5. To assemble: divide crispy hash browns into bowls, top with beef, then eggs.
  6. Pour hot gravy over everything and sprinkle with cheddar.
  7. Add hot sauce if you're feeling dramatic and serve immediately.
