Ultra-Fast Veggie Egg Rolls

Ingredients

  • 8 egg roll wrappers
  • 2 cup coleslaw mix (shredded cabbage & carrots)
  • 2 tbsp soy sauce
  • 1 tsp sesame oil (optional)
  • 1 tsp grated ginger or garlic powder (optional)
  • Non-stick spray or 1 tbsp oil

Steps

  1. Place coleslaw mix in a bowl and toss with soy sauce, sesame oil, and ginger or garlic powder if using.
  2. Lay out an egg roll wrapper and spoon 2–3 tbsp filling near one corner.
  3. Fold the bottom corner over the filling, tuck in the sides, and roll tightly. Seal the edge with a dab of water.
  4. Preheat air fryer to 390°F (200°C) or oven to 425°F (220°C).
  5. Lightly spray egg rolls with non-stick spray or brush with oil.
  6. Air fry 6–8 minutes (or bake 12–15 minutes), turning once, until golden and crisp.
  7. Serve hot with sweet chili or soy dipping sauce.
